Simple Coronation Chickpea Sandwich: Vegan Recipe

Welcome to the delicious world of vegan sandwich-making! The Coronation Sandwich was originally made for the coronation of Queen Elizabeth II in 1953, however, this was made with chicken. My Simple Coronation Chickpea Sandwich: vegan recipe, is a twist on this original and packed with; chickpeas, raisins, and a delicious mix of curried vegan mayonnaise and mango chutney flavours.

This recipe contains simple ingredients, is quick to make, perfect for the whole family, and also keeps in the fridge for a couple of days.

Ingredients

Chickpeas – These are high in protein, fibre, iron, magnesium, and potassium and also provide a creamy texture to the sandwich

Vegan Mayonnaise – Adds creaminess and brings all the ingredients together.

Mango chutney – Gives sweetness to the sandwich

Mild curry powder – Adds flavour and gives a little heat to the coronation chickpea sandwich

Lemon Juice – the tanginess of the lemon gives flavour and provides a source of Vitamin C. 

Raisins – Adding natural sweetness and also a signature ingredient in a coronation sandwich

Red onion – Enhanced the flavour of the sandwich and also provides dietary fibre. 

Bread – The base for your sandwich – I love to use sourdough but it’s completely your choice

Little Gem lettuce – adding a few leaves of lettuce into the sandwich will add a fresh and crunchy texture!

Salt & Pepper to season – This is optional and I wouldn’t advise adding salt and only a little pepper if giving to your little one. 

How to make

STEP 1
Drain the chickpeas & place between kitchen paper or a clean cloth and squash slightly this will help to remove the shells. Next give them a little mash with a potato masher as this will help them take on the flavour.

STEP 2

Combine the chickpeas, red onion, vegan mayonnaise, mango chutney, curry powder and lemon juice in a large bowl and mix well. Season with black pepper if you would like

STEP 3

To put the sentence together, first, spread the chickpea filling onto the bread, next, add lettuce, and finally, top with another slice of bread.

Top tips 

Get mash-happy with the chickpeas: Give those chickpeas a mash and get the kids involved. Mashing the chickpeas helps them to take on the delicious traditional flavours.  

Spice it up, or keep it mild: Customise the level of spice in your sandwich by adding more curry powder or a dash of cayenne pepper if you’re feeling adventurous. Adjust it to suit your taste buds!

Prep ahead for convenience: Make the coronation chickpea filling in advance and store it in the fridge. When you’re ready to eat you can assemble the sandwich for a quick and easy meal.

Let the flavors mingle: If you’ve got a bit of time to why not let your ingredients chill in the fridge? It’s a simple trick to get them flavours going and it will make your sandwich taste even better.

Toast your bread or rolls for added crunch: Pop your bread or rolls in the toaster to add a crunch to each bite. It’ll also help prevent any sogginess when combined with the filling. You may only want to do this for the adults. 

Make it your own: Don’t be afraid to put your personal touch on the recipe. Add fresh herbs like cilantro/coriander or chopped mint, sliced cucumber, or you could even switch out the raisins for chopped apricots

Pair it with a tasty side: For a more substantial meal you could add some homemade chips or a large side salad.

Mediterranean Twist: Replace the mango chutney with sun-dried tomato pesto and the tsp curry powder with dried oregano and a sprinkle of crushed red pepper flakes for the adults. How to store

Keep it Fresh in the Fridge: Wrapping your sandwich in plastic wrap or putting it in an airtight container will help it to stay fresh and stop it from going soggy.

Separate and Save: Store the ingredients separately. Store the mix in an airtight container as this will keep it fresher and stop your bread going soggy. 

Enjoy Within a Few Days: Like any good thing, the coronation chickpea filling is best enjoyed within 2-3 days.

A: I’d go with canned as they are really convenient to use.

Q: Can I make this recipe ahead of time? 

A: Yes, see above. 

Q: Can I substitute the mango chutney with something else? 

A: Of course. If you’re not a fan of mango chutney, you can try using other fruit chutneys or even a sweet and tangy barbecue sauce for a different flavor twist. See variations above

Ingredients

  • 400 g Canned Chickpeas Rinsed and Drained
  • ½ Lemon
  • ½ Red onion Chopped Finely
  • 2 tsp Mild Curry Powder
  • 3 tbsp Vegan Mayonnaise
  • 2 tbsp Mango Chutney
  • 50 g Raisins
  • 8 slices bread
  • 1 Little Gem Lettuce

Instructions

  • Rinse and Drain the Chickpeas
  • Squash the Chickpeas between a towel

Notes

This recipe for a Coronation Chickpea Sandwich is super simple and quick to make. My top tips is to squash the chickpeas a little before mixing them together so that they take on the flavour! Enjoy!
